Undoubtedly L’Ombra del Falco represents Tenuta Crodarossa’s most complex wine: a pure Merlot Vigneti delle Dolomiti from overripe grapes that matures twelve months in barrels and turns on soft, captivating sensory registers, a dynamic structure thanks to the altitude of the planting.
The strictly hand-done harvest takes place in the fine Rive di Mugnai, in the Feltrino area. Here, as early as 1517, a statute, signed by 37 small entities, officially sanctioned the beginning of grape history in the Valbelluna.
Vinification: in red with soft pressing. The crushed grapes are fermented in French oak tonneaux according to the vinification integral method for 25 days with continuous stirring. At the end of fermentation, the tonneaux are topped up and a two-month post-fermentation maceration is carried out, during which the malolactic fermentation is also completed. Once racking has taken place, the resulting wine is placed back into the tonneaux for further ageing.
Maturation: 12 months in 400 l French oak tonneaux (Tonnellerie Baron).
Refinement: 6 months in bottle.

Organoleptic characteristics: Intense ruby red wine. A scent of spicy notes stand out as a prelude to hints of overripe red fruits, cherry, blackberry and redcurrant. Pleasantly fresh, complex and intense taste with pleasant velvety sensations. Bottle always stored horizontally in a cool, ventilated place.

Food pairings: goes well with game dishes, stewed or barbecued meats, roast lamb, mature cheeses.
