The ‘siesa’ in Veneto dialect represents a bush, quite tangled, where small animals usually take refuge to escape from predators or the human eye. A hiding place is certainly not what this pure Pavana grape is looking for, which stands out to the eye for its intense colour and to the palate for its pleasant velvety sensations.

Pavana is an indigenous cultivar grape that is now only found in the Feltrino and Valsugana areas. A rebellious wine that tastes of the mountains, grown in the historical Feltre wine-growing area, the Rive di Mugnai, and that goes perfectly with traditional Belluno dishes, so much so that it takes them arm in arm, recalling the forests of the Dolomites, the small red fruits that grow in the glades, and a sweetish woodiness that reminds us of vanilla..
Vinification: in red with soft pressing. The crushed grapes are fermented at a controlled temperature in stainless steel vats for 25 days with continuous pumping over and punching down.
Once racking has taken place, the wine obtained is placed in barrels where malolactic fermentation begins. This is conducted very slowly for a few weeks and remains there until bottling.
Maturation: 12 months in French oak barrels (Tonnelle- rie Baron)
Refinement: 6 months in bottle.

Organoleptic characteristics: Ruby red wine. Hints of small red fruits, black cherry, all surrounded by vanilla notes stand out to the nose.
Complex, soft and intense taste with pleasant velvety sensations.
Bottle always stored horizontally in a cool, ventilated place.

Food pairings: goes well with traditional Belluno dishes: pastin, game, grilled meats, cured meats and mature cheeses.
